Ingredients

  • Green or brown lentils
  • chopped celery
  • carrots
  • onions
  • garlic
  • fire-roasted tomatoes
  • tomato paste
  • fresh kale
  • dried oregano
  • basil
  • cumin
  • thyme

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat a tablespoon of olive oil over medium heat and sauté chopped celery, carrots, onions, and garlic until softened.
  3. Stir in the fire-roasted tomatoes, tomato paste, lentils, and enough water or vegetable broth to cover the mixture by about an inch.
  4. Add the dried oregano, basil, cumin, and thyme, and bring to a boil.
  5. Reduce heat and simmer for about 30 minutes, or until the lentils are tender.
  6. Stir in the kale and cook for an additional 5 minutes, allowing it to wilt.
  7. Taste and adjust seasoning before serving.
