Ingredients
- Green or brown lentils
- chopped celery
- carrots
- onions
- garlic
- fire-roasted tomatoes
- tomato paste
- fresh kale
- dried oregano
- basil
- cumin
- thyme
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat a tablespoon of olive oil over medium heat and sauté chopped celery, carrots, onions, and garlic until softened.
- Stir in the fire-roasted tomatoes, tomato paste, lentils, and enough water or vegetable broth to cover the mixture by about an inch.
- Add the dried oregano, basil, cumin, and thyme, and bring to a boil.
- Reduce heat and simmer for about 30 minutes, or until the lentils are tender.
- Stir in the kale and cook for an additional 5 minutes, allowing it to wilt.
- Taste and adjust seasoning before serving.
