Description

This delicious nectarine galette features a flaky, buttery crust filled with sweet, juicy nectarines, making it the perfect summer dessert.


Ingredients

  • 1.5 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 0.5 tsp salt
  • 8 tbsp unsalted butter very cold
  • cut into 1/2-inch cubes
  • 46 tbsp ice water
  • 45 medium nectarines about 1.5 lbs
  • cored and sliced 1/4-inch thick
  • 0.25 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice freshly squeezed
  • 0.5 tsp pure vanilla extract
  • 1 large egg beaten
  • 1 tbsp turbinado sugar

Instructions

  1. In a large bowl, mix the flour, sugar, and salt. Add the cold butter, and work it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Add the ice water gradually, mixing until the dough comes together. Shape the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough into a rough 12-inch circle. Transfer to a parchment-lined baking sheet.
  4. In a bowl, combine nectarines, sugar, cornstarch, lemon juice, and vanilla extract. Arrange the fruit mixture in the center of the dough, leaving a 2-inch border.
  5. Fold the edges of the dough over the filling, pleating as necessary. Brush the crust with the beaten egg and sprinkle with turbinado sugar.
  6. Bake for 25-30 minutes or until the crust is golden and the nectarines are tender. Let cool slightly before slicing and serving.

Notes

Feel free to use other fruits like peaches or pears in place of nectarines for a tasty variation.
