Ingredients

  • 1 cup packed light brown sugar
  • 1 (20 ounce) can sliced pineapple
  • 10 maraschino cherries

  • 4 large eggs
  • 1 cup white sugar
  • 1 tablespoon butter
  • melted
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with 1 tablespoon of melted butter.
  2. Sprinkle the packed brown sugar evenly over the bottom of the prepared pan.
  3. Arrange the sliced pineapple on top of the brown sugar, placing a cherry in the center of each pineapple ring and between slices.
  4. In a mixing bowl, combine the sifted cake flour, baking powder, and salt, whisking them together.
  5. In another bowl, beat the eggs with white sugar until the mixture is light and fluffy.
  6. Gradually add the dry ingredients to the egg mixture, alternating with the melted butter and almond extract, mixing until well combined.
