- 1 cup packed light brown sugar
- 1 (20 ounce) can sliced pineapple
- 10 maraschino cherries

- 1 cup white sugar
- 1 tablespoon butter

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with 1 tablespoon of melted butter.
- Sprinkle the packed brown sugar evenly over the bottom of the prepared pan.
- Arrange the sliced pineapple on top of the brown sugar, placing a cherry in the center of each pineapple ring and between slices.
- In a mixing bowl, combine the sifted cake flour, baking powder, and salt, whisking them together.
- In another bowl, beat the eggs with white sugar until the mixture is light and fluffy.
- Gradually add the dry ingredients to the egg mixture, alternating with the melted butter and almond extract, mixing until well combined.
- Pour the batter over the pineapples in the pan, smoothing it out evenly.
- Bake in the preheated oven for about 30 minutes or until a toothpick inserted into the center comes out clean.
