Description

This delightful Peach Chiffon Pie features a light and airy filling made from fresh peaches and whipped cream, nestled in a buttery graham cracker crust.

  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 1 cup whipping cream
  • 1 tsp vanilla
  • 2 cups peach puree from 6 – 7 ripe

  • 1 tbsp lemon juice
  • 2 drops red food coloring
  • 2 envelopes unflavored gelatin
  • 3 large egg whites
  • 1 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and mix the graham cracker crumbs with melted butter. Press this mixture into a pie pan and bake for 10 minutes. Let it cool.
  2. In a medium saucepan, combine the peach puree, lemon juice, and red food coloring. Sprinkle the gelatin over the peach mixture and let it sit for 5 minutes. Then, heat the mixture over low heat until the gelatin dissolves, stirring constantly. Remove from heat and let cool slightly.
  3. In a mixing bowl, whip the whipping cream with vanilla until stiff peaks form. Fold the whipped cream into the cooled peach mixture.
  4. In another bowl, beat the egg whites until soft peaks form, then gradually add the granulated sugar. Continue beating until stiff peaks form. Gently fold the egg whites into the peach mixture until fully incorporated.
  5. Pour the filling into the cooled graham cracker crust, smoothing the top. Refrigerate for at least 4 hours, or until set.
  6. Slice and serve chilled, garnished with additional whipped cream if desired.

Notes

Make sure the peaches are ripe for the best flavor. You can also use canned peaches if fresh ones are not available, but adjust the sweetness accordingly.
