Description

These Peach Cobbler Cheesecake Bars combine the creamy goodness of cheesecake with the fruity flavors of peach cobbler, all nestled in a sweet graham cracker crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter

  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 ½ cups diced fresh or canned peaches (drained if canned)
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup unsalted butter
  • cold and cubed
  • ¼ tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well blended; press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese, granulated sugar, and vanilla until smooth; add eggs one at a time, mixing well after each addition. Pour over the crust in the pan.
  4. In a separate bowl, mix peaches, brown sugar, cinnamon, and cornstarch until the peaches are well coated; pour over the cheesecake layer.
  5. For the crumble, mix flour, brown sugar, cubed butter, and cinnamon in a bowl until crumbly; sprinkle over the peach layer.
  6. Bake for 30 minutes, until the topping is golden and the cheesecake is set. Let cool before slicing.

Notes

For a stronger peach flavor, consider using fresh peaches when in season. You can also add a drizzle of caramel sauce on top before serving.
