- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter

- 2 ½ cups diced fresh or canned peaches (drained if canned)
- ¼ cup brown sugar
- 1 tsp cinnamon
- 1 tbsp cornstarch
- ½ cup all-purpose flour
- ¼ cup brown sugar
- ¼ cup unsalted butter
- cold and cubed
- ¼ tsp cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well blended; press into the bottom of the prepared pan.
- In another bowl, beat cream cheese, granulated sugar, and vanilla until smooth; add eggs one at a time, mixing well after each addition. Pour over the crust in the pan.
- In a separate bowl, mix peaches, brown sugar, cinnamon, and cornstarch until the peaches are well coated; pour over the cheesecake layer.
- For the crumble, mix flour, brown sugar, cubed butter, and cinnamon in a bowl until crumbly; sprinkle over the peach layer.
- Bake for 30 minutes, until the topping is golden and the cheesecake is set. Let cool before slicing.
Notes
For a stronger peach flavor, consider using fresh peaches when in season. You can also add a drizzle of caramel sauce on top before serving.
