Ingredients

  • ⅔ cup canned pumpkin puree
  • ¼ cup + 1 tbsp cold heavy cream
  • 1 large egg
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp salt
  • 2 and ½ tsp baking powder
  • 1 and ¾ tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • ¼ tsp ground cloves
  • ½ cup light brown sugar
  • 3 tbsp granulated sugar
  • ½ cup + 1 tbsp cold salted butter
  • 12 tbsp extra heavy cream
  • raw sugar
  • ¼ cup salted butter
  • 2 tbsp maple syrup
  • pinch of salt
  • 1 cup powdered sugar
  • 2 tsp bourbon
  • 1 and ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, spices, salt, and sugars.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix the pumpkin puree, heavy cream, egg, and vanilla extract until combined.
  5. Add the wet ingredients to the dry ingredients and mix until just combined; do not overmix.
  6. Turn the dough onto a floured surface and pat it into a circle about 1 inch thick. Cut into 8 wedges.
  7. Transfer the scones to the prepared baking sheet, brush with heavy cream, and sprinkle with raw sugar.
  8. Bake for 20-25 minutes or until golden brown.
  9. While the scones bake, melt the butter for the glaze and whisk in maple syrup, salt, powdered sugar, bourbon, and vanilla until smooth.
  10. Drizzle the glaze over the warm scones before serving.

Notes
