Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the sliced baguette on a baking sheet, season with salt and pepper, and brush with melted butter mixed with minced garlic.
- Bake for about 10-12 minutes or until the baguette slices are golden brown and crispy.
- Meanwhile, in a medium bowl, combine diced peaches, chopped tomatoes, olive oil, basil, and lemon juice. Mix well.
- In another bowl, whip the ricotta cheese until smooth and creamy.
- To assemble, spread a generous amount of whipped ricotta on each toasted baguette slice, top with the peach and tomato mixture, and drizzle with balsamic glaze.
