Description

Southwest Chicken Stuffed Peppers are a flavorful, hearty dish packed with a delicious filling of ground chicken, black beans, rice, and spices, all baked in tender bell pepper halves.


Ingredients

  • halved with centers removed

  • 1 14-ounce cans petite diced tomatoes
  • 1 15-ounce can tomato sauce
  • 1 pound ground chicken or turkey
  • 1 15-ounce can black beans
  • drained and rinsed
  • 2 cups cooked brown rice
  • 1 egg
  • 2/3 cup chopped onion
  • 3/4 cup dairy free cheddar shreds or shredded cheddar cheese
  • 4 garlic cloves
  • minced
  • 1 tablespoon taco seasoning
  • 1 1/2 teaspoons coarse salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground chicken or turkey over medium heat until fully cooked.
  3. Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  4. Stir in the black beans, cooked brown rice, egg, taco seasoning, salt, and pepper until well combined.
  5. Remove from heat and fold in the shredded cheese.
  6. Place the halved bell peppers in a baking dish and fill them with the chicken mixture.
  7. Top the filled peppers with the diced tomatoes and tomato sauce.
  8. Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
  9. Garnish with cilantro before serving.

Notes

For added flavor, consider using a variety of cheese or adding jalapeños for some heat.
