Southwest Chicken Stuffed Peppers are a flavorful, hearty dish packed with a delicious filling of ground chicken, black beans, rice, and spices, all baked in tender bell pepper halves.

- 8 bell peppers

- 1 14-ounce cans petite diced tomatoes
- 1 15-ounce can tomato sauce
- 1 pound ground chicken or turkey
- 1 15-ounce can black beans
- drained and rinsed
- 2 cups cooked brown rice
- 1 egg
- 2/3 cup chopped onion
- 3/4 cup dairy free cheddar shreds or shredded cheddar cheese
- 4 garlic cloves
- minced
- 1 tablespoon taco seasoning
- 1 1/2 teaspoons coarse salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground chicken or turkey over medium heat until fully cooked.
- Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
- Stir in the black beans, cooked brown rice, egg, taco seasoning, salt, and pepper until well combined.
- Remove from heat and fold in the shredded cheese.
- Place the halved bell peppers in a baking dish and fill them with the chicken mixture.
- Top the filled peppers with the diced tomatoes and tomato sauce.
- Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
- Garnish with cilantro before serving.
Notes
For added flavor, consider using a variety of cheese or adding jalapeños for some heat.
