- 1/2 cup (112g) salted Challenge butter

- 4 oz (2/3 cup | 116g) semi-sweet chocolate chips
- 6 tbsp (90ml) heavy whipping cream
- 24 oz (678g) Challenge cream cheese

- 1 cup (144g) light brown sugar
- 3 tbsp (24g) all-purpose flour
- 1 cup (230g) sour cream
- 1 1/2 tbsp vanilla extract
- 3 large eggs
- 2 oz (1/3 cup | 58g) semi-sweet chocolate chips
- 3 tbsp (45ml) heavy whipping cream
Instructions
- Preheat your oven to 325°F (163°C) and prepare a springform pan by lightly greasing it.
- In a bowl, combine graham cracker crumbs, melted butter, brown sugar, and pecan chips. Press this mixture into the bottom of the prepared pan to form the crust.
- In a saucepan, melt 2 cups of sugar over medium heat until golden. Add butter and whisk until melted, then carefully stir in heavy whipping cream. Allow to cool and set aside.
- In a mixing bowl, melt the semi-sweet chocolate chips with 6 tbsp of heavy cream over a double boiler or microwave. Stir until smooth and set aside.
- In another mixing bowl, beat the cream cheese until smooth. Gradually add in light brown sugar, flour, and mix well. Then, mix in sour cream, vanilla extract, and eggs, one at a time, until blended. Pour in the melted chocolate and mix until combined.
- Pour the cheesecake filling over the crust in the springform pan. Bake for 30-35 minutes, or until the edges are set but the center is slightly jiggly.
- Remove from the oven and let cool for about 10 minutes before adding the caramel sauce and pecan chips on top. Refrigerate for at least 4 hours, preferably overnight.
- For the chocolate drizzle, melt 2 oz of semi-sweet chocolate chips with 3 tbsp of heavy cream. Stir until smooth and drizzle over the chilled cheesecake before serving.
